OESO is the E mashbill — 75% corn, 20% rye, 5% malted barley — fermented with the O yeast, which the distillery describes as rich fruit and full body. Bourbon Guy: cinnamon and caramel on both nose and palate with oak present, and a finish of dominant spice with a hint of mint. Breaking Bourbon reviewed the 2025 OESO and found the O yeast's fruit — red berries and stone fruit — under a cinnamon-caramel frame. Expect a dessert-leaning, fruit-forward bourbon that reads sweeter than OESK and rounder than OBSF, with medium body and a spiced finish.
